Catfish Day, Strawberry Parfait Day

It was President Reagan who issued a proclamation in 1987 making today National Catfish Day. Maybe he was impressed that there are over 3,000 catfish species known to man. Or maybe he just liked a good fried catfish sandwich.

Southern Fried Catfish. This recipe starts off with, ” If you don’t think you like catfish then somebody didn’t do something right. ”

★~ Strawberry Parfait Day:

Catfish Day, Strawberry Parfait Day

A parfait is usually a layered dessert served in a glass similarly named. The layers can be custard, ice cream, or yogurt, followed by layers of fruits or fruit purees. Fresh strawberries make this a perfect summer dessert. One way to make this dessert is with cupcakes.

• 6 Vanilla cupcakes

• 1 pint of strawberries

• whipped cream (homemade or store bought)

• 6 parfait cups, wine glasses or small plastic beverage glasses

• 2 – 3 teaspoons sugar (optional)

Strawberry Parfait Recipe Directions

Wash and thinly slice strawberries.  Place them in a bowl and sprinkle with 2 -3 teaspoons of sugar if desired.

Cut each vanilla cupcake in half horizontally.  Place the bottoms of the cupcakes in the bottom of your serving cups.

Spoon 1/12 of the strawberries over the cupcake bottoms followed by 1 -2 tablespoons of whipped cream.

Place the tops of the cupcakes on top of the whipped cream.  Follow with more strawberries and more whipped cream.  Top with a strawberry slice and a mint sprig.

Cooper Anderson, better known as Crimson Cooper, is a therapy dog. His regular gigs includes visiting hospitals, rehab centers, and nursing homes  —  but two days a week he hangs out in the Countway Library of Medicine at Harvard Medical School and is   available to students and faculty for a playdate.

Why have a therapy dog in the library? As the Harvard Gazette reported, Cooper’s there for stress relief, providing a bit of reprieve from the sometimes high-intensity of academia. He’s “an unusually calm dog” who is “content to wrestle with a toy or cuddle on the library desk’s worn, brown couch.”

Cooper is available Tuesday and Thursdays, 9 AM to 5 PM, at the library. You can’t check him out though — visits have to take place in the library.

Thunder, lightening and rain! The weather in Chicago is wet. I kind of wish that I was running a camp for ducks, and swans. No geese.

I keep forgetting to share this story with my sweet Mom about her “dear boy,” so I’ll share it here. You remember that peaches and cream day was earlier this week, right? Well, after mentioning this to Cole he decided he had a terrible craving for peaches and cream so we bought the ingredients (Holy Peach Seed! Peaches are so expensive right now) and later that night the conversation went like this….

Mom, I’m going to make the peaches and cream.

Yum, sounds great.

About 15 minutes later my teen comes upstairs with one bowl of peaches of cream and a spoon. I look at him with some surprise and ask if he made enough for both of us…

Mom, you didn’t say you wanted any.

True. I didn’t.

And there lies the  fundamental difference between men and women.

To my teens credit, upon noticing the look on my face, he immediately got it and started to laugh hard.  No worries, I’m planning my own obtuse revenge.

Yesterday afternoon, we watched Italy play Uruguay in a World Cup game, and I was stunned to see Luis Suarez sink his teeth into Italy defender Giorgio Chiellini’s shoulder. What?? Cole informed me Luis is nicknamed Canabal and has bitten countless times before.  Perhaps, I’m a overly sensitive after the whole Cookie incident, but can you even imagine?

    I don’t think we’ll catch catfish so maybe I can substitute trout.
    The point is you didn’t ask and I am sure Cole explained this to you.
    Somebody needs to remove a few of Luis teeth. Surprised it has happened already.

    • I hope you are enjoying your fishing trip. Trout will work. Yes, Cole did explain it to me. In the future I will be much clearer.
      It does seem a little surprising that someone hasn’t punched the guy. It happens, you know.

    Still enjoy the sounds of Carly Simon.
    One of these days, I will pursue therapy dog training with Nik & see if we have what it takes.
    Huh…….Cole not sharing dessert? When is he leaving again???
    Rain, again, earlier today. We finished our walk before the storm under threatening skies. Nik, for one, is not big on rain & getting wet.
    Suarez needed a lengthy suspension way before yesterday’s biting. What a dope. Same goes for those responsible for *punishing* said infractions.

    • I guess Suarez is going to be suspended and maybe a muzzle if the suspension is ever lifted. You know once a bitter, always a bitter.
      Well, you know, he didn’t know I wanted any. . .I did not grab him by the throat, look him in the eyes and say with loudly and with malice—I want some too.
      Most Dobe’s it seems think they will melt in any kind of weather. Ha.

  3. Think I will pass on the fish but the parfait looks good. I haven’t had my fav for a long time, a Dairy Queen Peanutbutter parfait..must get one soon…
    Kewpie dolls are cute..I have seen some guys lately with that Kewpie doll hairdo ..ugh !! What are they thinking ? 8)

    • Ug is right. I don’t think they are thinking.
      I had one of those Dairy Queen Peanutbutter parfait last year when you mentioned them. SO GOOD. I’m going back this weekend.

  4. I’d have to substitute blueberries for those strawberries in the parfait — then, yum!
    Never liked Kewpie dolls. They rank up there with clowns and mimes.
    Domer told me about the bite, and I was shocked. How somebody can get away with such violence is beyond me (and I understand this isn’t his first “attack”!)
    Had to giggle over Cole and the peaches — sounds just about right, you know!

    • I’m not a fan of Kewpies either.
      Substitutes don’t upset us :-D.
      Well, Luis excuse is “things happen in soccer.” Really? I think the Italian Mama on the other team ought to have a word with Luis.
      Oh it’s about right…we love our boys but they are really clueless sometimes–at least mine is.

  5. I love peaches and cream. I’m not at all surprised about Cole and the peaches. he’s turning in to SUCH a guy!!! It’s like last year when your father asked me if I wanted cream in my coffee!
    This sat you can go to Long Silvers and get free fish and chips, no purchase needed. No I won’t be dropping in.

  6. Yes, that was one heck of bite the other day! I heard his defense today–that the guy’s shoulder ran into his teeth! That from a guy nicknamed the Cannibal! Folks are World Cup Crazy here in Ecuador!

    • I bet it is insane. I read the Cannibal commented “things happen in soccer–they are making to big a deal out of a bite.” I’m amazed his teeth having all been knocked out. I’m not sure where Ecuador is ranked right now. Last I knew they they were tied with France. If they are still in the game – Good Luck.
