Pucker up, sweet stuff — today is Lemon Meringue Pie Day!

Since Medieval times, we’ve had an affinity for lemon pies and custards, but meringue didn’t start rearing its pillowy head until the 1600s. Alexander Frehse had the bright idea of combining this tangy-sweet duo into a pie in the nineteenth century.

I’ve never made a lemon meringue pie, but I have heard that the lemon curd and cornstarch filling can be a fickle feat to pull off. However, I do have it on good authority that the recipe on the side of the cornstarch box works like a charm, and if you’re ever unsure about the consistency, cook it just a minute longer. I know taking cooking tips from the blogger who doesn’t cook might not seem like a good idea, but I’m masterful at befriending good cooks, so give the tip a try and enjoy some lemon meringue pie!

♥~ 1977 – 8-year-old Rebecca Chase sank a hole-in-one on the 125-yard par-3 fifth hole at Oak Knoll golf course in The Dalles, Oregon. It was the first hole she ever played

♥~ 2002 – Authorities in Bethlehem, Pennsylvania, charged a 30-year-old man for public drunkenness after the slowest police chase on record. The man was cruising down the street at 3 miles an hour on a child’s Fisher Price Power Wheels car.

She died at Santa Barbara, CA, Aug 13, 2004.

Are you ready to be a warrior for inner peace? Doing less and organizing more simplifies for sure. But until you deal with the ways you get knotted up inside, here are a few suggestions to loosen up.

♥~ When you are triggered, rather than playing it out in the usual way, stop and breathe.

♥~ Simply notice the thought patterns, feelings, and bodily sensations that are present. Just explore,  be curious. What are you thinking? What is the energy behind the thoughts? What feelings and physical sensations are present? These questions allow you to become familiar with how your habits work so they no longer control you.

♥~ Find the most loving place inside you – the soft spot that melts when you encounter puppies, babies, or those most dear to you. Pour this love into the tension and painful feelings. This is the healing balm that untangles the knot.

♥~ Rinse and repeat every time you are struggling.

♥~ Move forward in a way that supports your clarity, happiness, and well being.

One of my favorite ways to relax is to pop open a little coke and sit on the patio watching my pups play. I’m also very fond of reflexology. A 30 minute foot massage can chase all my cares away. And of-course laughing hard, is guaranteed to put me in a better frame of mind.

    Love Lemon pie minus the meringue..yuk, I replace it with whipped cream….must have some today..
    My brother, Chuck, attended Woodstock..wow !

    • Does he still have the jeans or t-shirt he wore to Woodstock? Lots of people saved them–or so I’ve heard.
      I’ll have to try the whip cream recipe.

  2. My favorite pie! I’m going to take a couple to the office today. The bakery always has them on hand in the summer.
    Golf relaxes me. I’m a decent golfer because I play so much but I’m not that invested in the score. I like being outside, swinging a club and chatting with friends. And this may sound odd but my daughter is a very relaxing person to be with and has been since she was a baby. She is graceful, soft spoken and has never been a busy kid unlike my son who leaps, throws and spins all the time. Enjoy both but when I want to relax my daughter is my first choice.

    • Interesting about your daughter. What is her major? With her calming effect on people she will be sought after. Bet you were a popular guy at the office!

  3. Love Lemon Meringue pie. So good with coffee. What relaxes me is Bubble baths! Sitting on the patio swing with my hubby sipping wine and talking nonsense. Sitting next to one of my kids after they have fallen asleep and breathing with them. I’m usually wound up like a top but I try to find sometime every day to sit back and take a few deep breaths.

    • Bubble baths are best especially if you can eat a piece of cake while you soak. I’ve learned to breath and it does help.

  4. Really? The recipe on the box? Hmmm. I used to try recipes for the pie years ago, but never tried that one. My Dearly Beloved always compared mine to his “Granny’s.” Since he didn’t have Granny’s recipe and she’s been dead for decades, I said to heck with it and now make only the one that uses sweetened condensed milk, which is my favorite anyhow.

    • Would I lie you? Never. Nothing ever compares to Granny or Mama.. Granny probably used the recipe on the box 😀

  5. The most relaxing place for me is on a floaty in the pool just letting it go wherever it goes . The warm sunshine and cooling water is a big plus. My mom LOVED lemon meringue pie. Me…so so. Banana cream is my fav.i would love your job of just sitting with your pups and watching their antics.

    • The water is the best…especially if you can just float along. My campers are very entertaining, if you ever come to Chicago you will have to join us for a root beer float on the patio.

  6. Yum, lemon meringue pie is one of my favorites! Since I don’t think I’m going to have one today, I’ll just have a lemon yogurt (and imagine I’m having pie!)

    Relaxing? What’s that? I’ve been so busy lately that I’ve almost forgotten! But at Domer’s suggestion, I added the Hawaiian Radio channel to my Pandora lineup — it’s positively perfect! All I need is some sand beneath my feet, gentle waves lapping the shoreline, sunglasses perched on my nose, and something tall and cold (with an umbrella in it) to sip!!

    • Good imagination! If you have a Bakers Square they make a great Lemon Meringue pie.
      I know what you mean these days I feel like I have stolen more chain than I can swim with….I might have to add that Hawaiian Radio station to my line up. Umbrella seals the experience!

  7. rascal looks pretty relaxed on that chair! i am wound pretty tight & tend to stay that way. i do have down time with nik which is nice. not enough though! running puts life in perspective, too.
    i’d rather have the lemon filling than today’s total pie. lemon cream is a favorite!

Laughter is definitely a great way to unwind—-my BFF called me last night with a great story and we laughed and laughed and laughed and it was good for my soul. 🙂
