Pasta with Broccoli

This is very easy and inexpensive pasta dish to prepare. From start to finish it only takes 15 minutes. It a great meal for kids and busy mom’s on school nights.

Penne with Argitoni (Broccoli )
4 tbsp olive oil
4 cloves of garlic
4 cups steamed broccoli, coarsely chopped
1 c chicken stock
1/2 cup of grated Romano Cheese
1 lb penne or bow tie pasta
Heat olive oil in sauté pan over med heat. Add garlic and cook 2 min until fragrant. Add broccoli and sauté 1 minute. Add stock and raise heat to high and cook until liquid is all evaporated, stirring occasionally. Bring 6 quarts of water to a boil. Add pasta, cook until al dente; drain. Toss pasta with broccoli sauce, season with black pepper to taste. Add Romano or parmesan cheese. Toss and add more when serving. Makes 4 servings.

  1. I made this tonight and it was very good! I added bacon because I had some we needed to use up (hope that was okay Nancy. I also forgot to add water to the pot I was steaming the broccoli in…so the broccoli was a little overdone. We have enough for left overs tomorrow night, which always makes me

  2. Bacon is a nice addition I like it ! I love quick pasta dishes and they are affordable and delicious.

  3. Katybeth you do not need to add water to the broccoli at any time. The water is for boiling the pasta alone. Read the recipie again. The chicken broth is the only liquid used to essentially steam or cook your broccoli. Do you understand?

  4. Well, I steamed 4 cups of broccoli in water, coarsely chopped it and added the steamed broccoli to the pan with the olive oil, garlic, and chicken broth and let cook until liquid evaporated. I would not say it was a broccoli sauce but the broccoli did absorb the chicken broth and was tasty. We did however wonder about the sauce…or Cole did — Have enough to try this again tomorrow. 😀 I bet you can not wait for me to try Spaghetti Carbonara-Leahy Style.
